Jason Vincent



Class of 2013

When Jason Vincent was named a F&W Best New Chef, he was leading the kitchen at Nightwood, one of the pioneering restaurants that brought fine dining to Chicago’s South Side. After he left, Vincent opened Giant in Logan Square in 2016, and he’s refused to put the cuisine into one specific box. His imaginative approach extends to Chef’s Special Cocktail Bar, opened in 2020, and Pizza Matta, which debuted in 2023. Vincent’s longevity in a constantly evolving restaurant scene is proof he holds himself and his team to a high standard but never forgets that food should surprise and delight.
