What is Reblochon cheese?

Reblochon is a semisoft cow’s milk cheese from the Savoie and Haute Savoie regions of France. It’s extremely creamy, with a nutty, buttery flavor. If you can’t find Reblochon, Taleggio, Camembert, Brie, or Fontina are good alternatives.

Adding a little water while caramelizing the onion can help release the browned bits of bacon from the bottom of the skillet, infusing their flavor into the onions.
