I’ve been avoiding Teflon since the scientific community established a connection between PFAS and artificial nonstick coatings. (As a holder of a Master’s degree in Public Health Nutrition, I lean cautious in these matters.) Though they’re hard to outrun nowadays, these pesky PFAS, or forever chemicals, have been linked to all kinds of health problems. And they tend to slough off more easily — into our food — when materials are heated, scuffed, or scratched, so it’s worth making changes where we can.
A few years ago, I was impressed by Tramontina’s triple-clad stainless steel skillet, which was nearly indistinguishable from my pricier pans. Since then, I’ve come to trust Tramontina’s cookware for professional performance at a slice of the price. When I was on the hunt for a safer nonstick pan that wouldn’t take up too much of the limited space in my cabinet, I met the All-in-One Plus Pan.

Tramontina’s All-in-One Plus is pretty darn useful. It has a roomy five-quart capacity, on par with many Dutch ovens, and it comes with a range of accessories that turn it into a true multitasker that takes up little real estate. The pan comes with an aluminum lid that snugly sits on top, a stainless steel steaming insert that nests inside, a bamboo trivet to protect your countertops, and a wooden cooking utensil that won’t mar the nonstick interior.
While I certainly could have purchased a few separate pots and pans from Tramontina, the All-in-One Plus reminded me of the Our Place Always Pan — a multitasker that morphs from saucier to steamer to skillet — at a price I was willing to take a gamble on. And the ceramic certainly promised nonstick performance with fewer harmful chemical components. Could I really do everything the All-in-One Plus pledged — fry, braise, steam, sauté — in a single pan?

Turns out, yes. And I’ve never regretted getting the workhorse. In fact, the All-in-One Plus has replaced more than half of my cookware. I can sear salmon or chicken thighs on the stove, without losing a speck of crispy skin. Braising is a set-it-and-forget-it deal, thanks to the even heating of the pan’s cold-forged body and aluminum lid. I can safely bake recipes — like my go-to brunch, broccoli-rabe and ricotta frittata — up to 400°F, too. (I still can’t quite believe how neatly the just-set, creamy wedges of egg lift out of the pan.)
For a speedy dinner, I can toss baby bok choy and some frozen potstickers onto the steaming insert and chow down within 15 minutes. On any given day, I can go from breakfast to dinner in a single pan. And this pan is not only safe for ceramic- or glass-top electric stoves and gas ranges, it’s also induction-friendly. Plus, the pan, lid, and steamer insert can all go into the dishwasher.

It’s a charming thing, too, less industrial-looking than the sea of stainless steel I typically use. I chose the sunny yellow shade for my pan — it brings me joy any time of day — but I would have been happy with any of the seven vibrant and modern colorways.
