Carnival Cruise Line has unveiled The Next Course, a new wave of culinary experiences featuring restaurants and bars launching aboard two new ships and a series of dining upgrades now rolling out fleetwide.
The new venues will debut on Carnival Festivale in 2027 and Carnival Tropicale in 2028. A range of new dining options is already beginning to appear across the rest of the fleet.
The program is rooted in scale. Carnival carries more than six million guests and serves over 100 million meals each year, a vantage point the line says gives it unusually clear insight into how guest tastes are evolving.
That insight, the company says, directly shaped the new offerings. The result spans both marquee specialty restaurants and everyday dining touches.
“Our approach to dining combined with our team’s amazing service is a driving force behind Carnival’s success,” said Christine Duffy, president of Carnival Cruise Line. She called the program a bold step toward giving guests an unforgettable experience with a variety of vibrant new flavors fleetwide.
The push comes as dining has become one of the most competitive fronts in the cruise industry. Major lines have steadily expanded their specialty restaurant collections in recent years, treating onboard food as a central part of the guest experience rather than an afterthought.
Emeril Lagasse has anchored that effort at Carnival since taking on the chief culinary officer role, lending his name and culinary direction to the line’s marquee venues. His involvement has given Carnival a recognizable culinary face at a time when guests increasingly weigh dining when choosing a cruise.
The centerpiece is a lineup of new specialty restaurants. Each carries a distinct culinary identity.
Emeril’s Coastal Seafood anchors the collection with coastal-inspired cuisine from Emeril Lagasse. The concept leans into the flavors of the shoreline.
Uku Lei Lei pairs Hawaiian specialties with Asian classics. The restaurant blends island cooking with familiar Asian dishes.
Fetaccine takes a Mediterranean-inspired approach, combining Italian favorites and Greek specialties on a single menu. It brings together two of the region’s most popular culinary traditions.
Le Bistro Musicale rounds out the restaurant lineup with classic French cuisine in a relaxed, music-filled Parisian setting. The venue will be offered exclusively aboard Carnival Festivale.
Carnival Festivale will also feature several new bar outlets. The trio is designed to anchor the ship’s nightlife and daytime social scene.
The Spark is a vibrant lounge built around live performances and cocktails inspired by iconic songs. The space pairs music and drinks throughout the evening.
Mix is a playful bar where guests can order creative cocktails or craft their own, layering flavors to build a personalized drink. The concept gives guests a hands-on role in their orders.
Festival Grounds Coffee & Bar serves specialty coffees and cocktails in a dynamic, all-day space. It is designed to work from morning through the evening.
Beyond the two new ships, The Next Course introduces a range of new dining options across the existing fleet. The changes touch nearly every meal of the day.
The Main Dining Room will feature new culinary creations for breakfast, brunch and dinner. The refreshed menus aim to update the room while preserving its familiar appeal.
The Lido Marketplace will add a new Lido Family Menu with daily kid-approved favorites, a nod to the families who make up a large share of Carnival’s guests. The popular BlueIguana Cantina will also begin offering daily rotating specials.
Mornings gain a new option in Bagels @ Sea, a station serving freshly baked bagels with assorted toppings. It expands the line’s breakfast lineup.
Carnival’s signature Chef’s Table experience is also being revamped. The reworked format features elevated multi-course dinners built around regionally inspired flavors.
New pop-ups are part of the rollout as well. Fruity & Frosted Breakfast Bars and Ice Cream and Milkshake Bars are being added to the line’s Excel-class ships, with a variety of other pop-ups appearing across the fleet.
Convenience is another focus of the program. A new Mobile Coffee Shop Order & Pickup option expands grab-and-go choices and adds mobile ordering, while Express Dining offers a faster path through the Main Dining Room for guests who want to move quickly.
Taken together, the initiative represents one of the most comprehensive dining overhauls Carnival has announced in recent years. It reaches both the high-profile specialty restaurants and the everyday venues guests use most.
The scope is notable, stretching from a single French bistro to a milkshake bar aimed at younger guests. The breadth reflects how central dining has become to the cruise experience and to competition among the major lines.
The arrival of Carnival Festivale in 2027 will mark the fullest expression of the program, with its exclusive venues and new bars. Carnival Tropicale will follow in 2028, extending the concept to a second new ship.
In the meantime, the early fleetwide enhancements give current guests a preview of what is coming. Travelers sailing in the months ahead will begin to see the new menus, pop-ups and added conveniences.
