
The St. Regis Bal Harbour Resort announces the appointment of Seamus Dooley as Director of Food and Beverage, marking a continued evolution of the resort’s culinary vision and dining experience.
Dooley joins with a well-rounded background across Forbes Five-Star hotels and Michelin-recognized restaurants. Most recently, he led food and beverage operations at Rosewood Sand Hill, overseeing a Forbes Five-Star property and Michelin-recommended dining. His previous experience includes leadership roles at The West Hollywood EDITION, The Tampa EDITION, home to the One Michelin Star restaurant Lilac, and The Ritz-Carlton Toronto.
A trained sommelier with an MBA in Finance, Dooley approaches food and beverage with a balance of creativity and structure, developing concepts that are grounded in strong fundamentals while maintaining a sharp focus on performance. At St. Regis Bal Harbour, he will oversee all dining operations, shaping experiences that feel both thoughtful and seamless for guests.
