This Caribbean Island Is Getting a New Hotel With a Rooftop Pool, a Private Club, and a Different Kind of Energy


George Town has long functioned as the center of life in the Cayman Islands. Government buildings line the streets near the harbor. Financial offices operate from modern towers. Duty-free shops, cafés and small restaurants fill the blocks between the waterfront and the inland business district. Cruise ships anchor offshore most days, with tenders carrying passengers into port.

Travelers pass through the capital constantly. Staying overnight in the middle of it has never really been part of the equation.

That changes this spring.

The new One GT hotel is preparing to open in the center of George Town, becoming the first hotel located directly in the heart of this lovely Caribbean capital, as we reported.

The resort is now taking reservations for a May 1 debut, CJ has confirmed.

The arrival introduces a different kind of stay in Grand Cayman. Instead of positioning guests along the island’s beach resort corridor, One GT (short for George Town, of course) places them inside the capital’s downtown grid, within walking distance of the harbor, restaurants, shops and cultural sites that define George Town.

Exploring George Town

Staying in the center of George Town gives travelers immediate access to one of the Cayman Islands’ most active neighborhoods.

The George Town waterfront lies only a few blocks away. From here you can watch cruise tenders shuttle passengers to shore or follow the harborfront for views of the Caribbean Sea. Nearby, the Cayman Islands National Museum occupies a restored historic building that documents the islands’ maritime past, including shipbuilding traditions, seafaring culture and the trade routes that once connected the Cayman Islands across the Caribbean.

Shops selling jewelry, art and Cayman-made goods line the surrounding streets, along with cafés and casual lunch spots that serve the weekday business crowd.

The area also provides access to the island’s marine environment. Several boat operators depart from the George Town waterfront for snorkeling and diving excursions. The clear waters surrounding Grand Cayman have long attracted divers and snorkelers exploring coral reefs and shallow sandbars.

Trips often head to Stingray City, where visitors enter waist-deep water on a shallow sandbar where southern stingrays glide through the turquoise sea. Other nearby reefs and coral gardens provide additional snorkeling opportunities along the western side of the island.

George Town also plays an important role in the island’s culinary landscape. Restaurants across the capital serve fresh seafood, Caribbean dishes and international cuisine influenced by the Cayman Islands’ diverse population. Conch fritters, grilled fish, lobster and Caribbean-style curries appear frequently on menus, along with modern dining rooms and cocktail bars that have expanded in recent years. That includes the legendary Grand Old House, home to the most iconic tables in the capital.

After sunset, the capital grows quieter than the resort areas along Seven Mile Beach, though several restaurants and lounges remain open late. Many visitors combine both areas during their stay, spending time in the capital before heading north to the beach corridor.

From One GT, Seven Mile Beach is roughly a 10-minute drive away, making it easy to spend time on the island’s famous shoreline while returning to the capital in the evening.

Rooftop Pools, Views and Downtown Amenities

Amenities at One GT focus on elevated views of the capital and rooftop spaces designed for social gatherings and relaxation.

The most distinctive feature is Grand Cayman’s only rooftop infinity-edge pool, positioned high above George Town with open views toward the Caribbean and the city skyline. Guests relax on shaded loungers while cocktails are served from the rooftop bar area.

VIP rooftop seating areas are also available, offering reserved lounge spaces and panoramic island views above the capital.

Another swimming option sits several floors below. The Oasis Pool, located on the third floor, provides a quieter setting surrounded by greenery and relaxed lounge seating.

Wellness facilities include a fitness center equipped with modern training equipment, along with space for rooftop yoga sessions overlooking the city. The hotel’s rooftop terrace also serves as a gathering space with panoramic views across George Town and the Caribbean horizon.

One GT also introduces an exclusive concept called ONE | Above, a private members club within the property that offers priority reservations, dedicated seating areas and invitation-only events for members and select guests.

Additional facilities include meeting rooms with natural light and modern audiovisual technology, designed for small business gatherings and private events. The property also offers secure on-site parking and valet service, conveniences that are uncommon in the center of George Town.

Throughout the property, floor-to-ceiling windows and elevated terraces focus attention outward, framing views across the streets of the capital and the sea beyond.

Dining at One GT

Dining at One GT is centered around three distinct venues that bring global cuisine into the heart of George Town. The hotel’s signature restaurant is Perle, an evening dining destination focused on French gastronomy with Mediterranean influences. The restaurant’s menu emphasizes refined coastal cooking, pairing classic techniques with modern presentations in an intimate dining room designed for dinner service in the capital.

Above the city, the rooftop restaurant and bar Byū anchors the hotel’s social scene. The venue combines island-Asian fusion cuisine with panoramic views across George Town and the Caribbean. Guests can order small plates and cocktails while music and an energetic rooftop atmosphere define the space. The restaurant sits alongside the hotel’s rooftop pool, making it one of the most prominent dining terraces in the capital.

For mornings and daytime gatherings, Café Bellini serves as the hotel’s café and bakery. The space functions as both a coffee bar and Italian-style pastry shop, offering house-made pastries, espresso drinks and a selection of gourmet products and market-style items.

The affiliation places the property within a collection that includes historic mansions, urban design hotels and intimate beachfront retreats, with each hotel maintaining its own independent character.

What Guests Are Booking First

Early reservations for opening week show entry pricing connected to the hotel’s Dawn Suite, an accommodation with a king bed and a city-view patio overlooking George Town.

The suite reflects the property’s overall approach. Rooms lean toward larger layouts designed more like residential accommodations than traditional compact hotel rooms. The result is a stay designed for travelers who want space and a base in the center of the island’s capital.

The building rises within George Town’s downtown streets, placing guests steps from the harborfront and the city’s main commercial district. From the front door, visitors can reach restaurants, cafés and shops within a short walk, something that has rarely been possible in Grand Cayman’s hotel landscape.

For decades, the island’s accommodations have clustered almost entirely along Seven Mile Beach, the famous stretch of white sand north of the capital. George Town functioned as the island’s working center rather than a destination for overnight stays.

Getting to Grand Cayman

Reaching Grand Cayman is straightforward for travelers across North America and the Caribbean.

Owen Roberts International Airport sits only a short drive from George Town and serves as the main gateway to the Cayman Islands. The airport receives direct flights from cities including Miami, New York, Charlotte, Atlanta, Dallas, Houston, Tampa and Toronto, along with service from several Caribbean hubs.

From the airport, George Town is typically about a 10-minute drive, placing One GT among the closest hotels to the island’s main aviation gateway.

Grand Cayman itself remains the largest of the three Cayman Islands and the center of the territory’s tourism industry. While Seven Mile Beach remains the island’s best-known attraction, the capital has grown into a destination of its own, combining waterfront views, historic buildings, restaurants and shopping streets within a compact downtown district.

With the opening of One GT, travelers will have the opportunity to stay directly in the center of George Town for the first time.

Booking the Opening

Reservations are already live ahead of the debut for May 1. 

Listings on the Small Luxury Hotels website currently show opening-night pricing beginning at $380 per night on May 1 for the Dawn Suite, which includes a king bed and city-view patio.

The launch introduces a new kind of Cayman stay: a hotel address inside the capital itself, steps from the harbor, restaurants and city streets that shape daily life in George Town.
