In the early 2000s, a handful of chefs helped Seattle define that nebulous concept of Pacific Northwest cuisine. The trail John Sundstrom blazed emphasized thoughtful sourcing from local farms, fishers, foragers, and purveyors. John Sundstrom remains at the top of his game, running his flagship restaurant, Lark, which opened in 2003, plus a sandwich shop, Slab, and neighborhood Italian restaurant, Cora.
