It has been years since Philadelphia’s dining scene could be summed up by the city’s favorite sandwich (although yes, you can still find excellent cheesesteaks). Today’s Philly is defined by restaurants helmed by scrappy, independent chefs; world-class sushi and Thai food; a robust bakery movement bolstered by locally milled grains; and excellent cocktail bars, despite Pennsylvania’s thorny liquor laws. It’s a city with both grit and warmth, and you see this and taste it in establishments that blur the lines between private supper club and public-facing business, and restaurants that celebrate waves of immigration, from Italian to Mexican to Vietnamese.
