Today’s Philly is defined by restaurants helmed by scrappy, independent chefs; world-class sushi and Thai food; a robust bakery movement bolstered by locally milled grains; and excellent cocktail bars, despite Pennsylvania’s thorny liquor laws. It’s a city with both grit and warmth, and you see this and taste it in establishments that blur the lines between private supper club and public-facing business, and restaurants that celebrate waves of immigration, from Italian to Mexican to Vietnamese.
