St Thomas Is Getting a New Floating Taco Bar 


It began with a childhood dream, and turned into one of the most popular places in the US Virgin Islands: Lime Out, the beloved floating taco bar in St John

And now the concept is expanding, with the new Lime Out St Thomas set to open its doors in the middle of next month, Caribbean Journal has learned.

That means you can head to Lindbergh, swim, paddle or sail to the bar and savor one a true only-in-the-Caribbean experience, replete with floating tables in the sea. 

The St Thomas edition will be set on one of our favorite beaches in St Thomas: Lindbergh Bay, with a larger bar than in St John — to the tune of 850 square feet, with all of its power coming from solar energy.

What won’t change? The fun, vibrant menu with tacos and cocktails — along with some special menu items unique to St Thomas, all curated by Chef Amaro Rivera. 

That means drinks like “The Danger” and “Nene’s Margarita,” along with vegan options and surf-and-turf. 

Even better? All of the food prep and cooking take place on land to “protect the marine environment,” and all materials used are biodegradable. 

The team says it hopes to forge bonds with local farms and fishermen for a truly sustainable operation. 

Initially, Lime Out St Thomas will be open Sunday to Friday from 10:30 AM to 4:30 PM, with the plan to open every day of the week beginning in late December. 

The formula, according to the team, a group of lifelong friends that opened the first Lime Out back in 2019: “to create the best day ever, every day.”
